Vacuum is used to speed up the process of infusion. When you create the perfect infused drink, the vacuum no longer has to do its work. So it's up to you whether you should use vacuum as it determines the taste of the water, liquor or spirits.
Using vacuum to infuse drinks, speeds up the process by at least 5x. So when you want to create healthy flavoured water, you are done in 5 minutes instead of 30. And by using vacuum, more flavour and vitamins are extracted from the ingredients making it not only more delicious but also healthier. When you infuse and/or store infused water, spirits or other liquids in plastic containers, there is always a risk of chemicals slowly leaching into your drinks. Especially when those containers are routinely washed in the dishwasher. Yes, the materials may have been labelled as ‘food approved’, but the effects over time when directly in contact with food are still uncertain.
Apart from the chemical problem, there is evidence that tiny pieces of plastic called “microplastics” and “nanoplastics” separate from containers and end up in the content of the container. These plastic particles end up in the body, which poses severe health risks.
Glass, however, does not leach chemicals and does not disintegrate into your infused drinks. It has been a safe and trusted way of storing and preparing foods for centuries. And of course: 100% recyclable and sustainable!
