Food loses quality when it’s exposed to air. It’s the reason that, for example, cookies and cereals lose their crispiness. That process is called “oxidation”. So, by removing the air from a jar, you slow down oxidation and your food stays fresh and full of flavour and nutrients.
The second reason that food spoils is bacteria. For example, when strawberries and blueberries get soft and moldy. Most bacteria need oxygen to work. So, remove the air and, again, you will slow down loss of quality.
Although air is the most important factor, there are more factors that contribute to spoilage, such as temperature and sunlight. And, of course, the condition of the food before storage and hygiene when handling and preparing food.

Does vacuum storage work for all foods?
Vacuum storage will extend shelf life for most types of food. That doesn't only apply to dry foods like cookies, nuts and cereals. Vacuum also works for fresh foods such as fruit salads and fresh strawberries, blueberries and even guacamole.
As a rule of thumb, vacuum will keep food fresh up to 5x longer, when compared to conventional storage. An example: when you buy strawberries, they usually start to lose their qiuality after about two days. Stored in a vacuum container (in the fridge!) you will extend freshness up to 1.5 weeks.
Please note that there are more factors that contribute to food aging and spoliage, inclusing temperature and the condition of the food before storage. Maintain good hygiene and always adhere to safe food handling guidelines.

Glass, however, does not leach chemicals and does not disintegrate into your food. It has been a safe and trusted way of storing and preparing foods for centuries. And of course: 100% recyclable and sustainable!

Glass jars can be used indefinitely, as long as they aren't damaged. Since the Nanostoppers and Airtender lids are also reusable, you can keep vacuum savin, marinating, pickling and more, as lang as you want!
One thing to keep in mind is that metal lids may not last forever. Since the standard metal lids have not been manufactured for endless use, the built-in seal might start to lose it's airtight function. Luckily, you can use any twist-top jar, so either replace the entire jar, just the lid or select a reusable Airtender jar and you're good to go. Just don't forget to recycle any jars and lids that you don't need anymore :)

The big difference is that, with a vacuum, you ensure that the flavouring process is accelerated. How exactly does that work? The vacuum ensures that the fibers of the vegetables or meat are slightly pulled apart and any air and juices are also extracted. This creates space for the marinade or liquid to penetrate the food faster and deeper.
When pickling and also infusing (for example making fruit flavoured water), something extra happens. Flavours and aromas are also extracted from your vegetables or fruit, enabling them to quickly mix with the liquid around them. As a result, an exchange of intense flavors is created.

Can I ferment in any jar?
Absolutely, but every jar will work a bit differently.
If you would like to ferment with twist-off jars or mason jars, you can use the Airtender Lid Punch to make a perfect hole in metal lids. You will need to insert a "water lock" in the hole, so the fermentation gases can escape. This type of accessory can be bought in most (online) shops that sell canning accessories.
You can also use Clip Top Jars and traditional Weck-style jars with Airtender vacuum lids. The bonus is that you can kickstart the fermentation process by creating a vacuum in the jar. And use the same jar after fermentation to vacuum seal your food and keep it fresh up to 5x longer.
How fast can I infuse drinks?

That depends on what you're infusing, but on average, vacuum can speed up infusion at least 5 times. For example, if you're making infused water, you could be done in 5 minutes in stead of at least 30.
And by using vacuum, more flavour and vitamins are extracted from the ingredients. So it's not only richer in flavour but also healthier. So why wait if you can enjoy a drink almost right away?

The vacuum will "open up" ingredients to extract and exchange flavours. So, just like with vacuium infusions: faster results and more intense flavours!

Which clip top jars are compatible with Airtender lids?
The Airtender vacuum lids fit the most commonly available size clip top jars, often referred to as "85"or "90". This means that they are compatible with multiple designs and brands, such as Bormioli Fido, Kilner and IKEA, as well as many private label brands.
Because of the large number of brands and jar designs, as well as the nature of glass production, it's always possible that lids do not properly fit certain jars. If you are uncertain about the compatibilty with our jars, please do not hesitate to contact us.
Alternatively, you can select any of the complete sets of jars with lids and Airtender vacuum pump.

What's the difference with traditional pickling?
Pickling in the traditional way is done by letting your vegetables or fruits ferment in a vinegar-like solution and/or brine, for a longer period of time. This results in the traditional sweet-and-sour taste (and also extends shelf-life). The only disadvantage is that this process usually takes quite some time.
Quick pickling with Airtender works by using vacuum. Take, for example, sliced cucumber or red onion. By placing them in a mixture of vinegar, sugar, salt and other ingredients in a jar under vacuum, you extract air and juices from the vegetables. You will clearly see the air bubbles while the vacuum is being created. This way, the vacuum quickly draws the pickling liquid into the vegetables, cutting down pickling time from hours or days into minutes.

Yes, the lids are dishwasher safe. For best cleaning, disassemble the lids by removing the silicone ring and the Nanostopper.

What is the difference with the standard glass lids and seals?
The Airtender Glass Top Vacuum Lids are actually two part lids. They are the original glass lids , but with a high-grade silicone cover.
The unique cover not only transforms the glass lid into an airtight closure, but also adda a vacuum option. So you can use your Weck-style jars and carafes with lids for storage without rattling glass or loose seals and clips. To keep food and drinks fresh up to 5x longer, vacuum seal them with the same lids and an Airtender vacuum pump.
But even that's not all. Use vacuum with your jars and carafes to quickly marinate, pickle and infuse. Or use the Airtender lids with the original metal clips to use your jars for fermentations and the lids will automatically release fermentation gases.

Is the Lid Punch safe to use?
Is the Lid Punch safe to use?
The Lid Punch has been designed to quickly and safely make a hole in metal twist-off and screw top lids. However, Like any other sharp kitchen tool such as a knife or scissors, you need to be mindful when using the Lid Punch.
Also, when removing the cut-out metal disc, keep in mind that the disc itself can be sharp. So always use a kitchen towel or cloth to remove it from the Lid Punch.
Just carefully study and always follow the instructions, and you will be punching holes in lids without any problems.
Can I also use Nanostoppers on plastic lids and/or jars?

Plastic jars or jars with plastic lids aren't suitable for vacuum. They simply aren't strong enough to resist the deep vacuum level that Airtender creates and will collapse or even implode.
Can I really use any jar with vacuum?

Yes, basically any airtight glass jar can be used to use with vacuum. Airtender provides solutions for twist-top jars, clip-top jars and glass top jars. Be sure to select the proper lids for each jar, and when using jars with the Airtender Lid Punch, make sure that you only use metal lids.
Plastic jars or jars with plastic lids aren't suitable for vacuum. They simply aren't strong enough to resist the deep vacuum level that Airtender creates and will collapse or even implode.
Importantly, we also don't recommend plastic jars because they aren't sustainable, and can be a health risk beacuse chemicals and microplastics can potentially get into your food.
Can I use all types of Mason Jars with the Lid Punch?

If you are using a canning jar with a screw typemetal lid, then the Lid Punch will work to make a hole for the Nanostopper.
You can use one-piece mason-jar type lids, or the two part type with a plate and screw ring. Regular twist-off lids with metal lids are also fine.

Vacuum stoppers won't work on sparkling wines for two reasons:
1) The gas that is released from the wine will cancel the vacuum over time
2) The vacuum will cause the gas to be extracted, so the wine will go flat

Wine is a natural product and by exposing it to air, it develops its full aroma and flavor. One of the frequently used terms for this process is "to let wine breathe". Usually, this takes anywhere from 30 minutes to several hours.
When you aerate wine, you speed up this process, by actively adding air to the wine and forcing it to react with it. The "oxidation" of the wine involves chemical changes in the wine, which bring out the characteristic flavours of the wine, such as fruits and wooden tones. It also makes the wine smoother to drink and reduces the negative effects of sulfites and tannins.

Aerating sparkling wine, whether white or red, is not very common or recommended. This is because the process dissipates their signature bubbles and diminishes the lively mouthfeel.
Of course, wine is a matter of personal taste. So, should you enjoy sparkling wine to be a bit smoother (or just don't like very bubbly drinks), you can let it breathe for a while or very gently aerate it. This will reduce the excessive bubbles, allowing the wine to settle and develop so that you can better taste the wine’s textures.
So it all depends on your preferences.

So, the aerator is not a direct replacement of the shaker, but just a different way of making a premium cocktail. It also makes it possible to make a cocktail directly in the glass. Perfect for large numbers, or when you just want to make one cocktail without having to clean a lot of tools.
Do you prefer to use a cocktail shaker? Then use the cocktail aerator to cut down on shaking time and boost flavour and foam, just like in the Cocktail Shaker PRO.

The aerator works by diffusing air from the pump into millions of microscopic air bubbles. These bubbles get trapped in the cocktail ingredients, instantly creating a rich foam.This process also mixes the ingredients themselves and boosts flavour at the same time.
When you use the aerator in a glass, you can create a premium foamed cocktail without a shaker. When you prefer to shake, the aerator will maximize the amount of foam and flavour in the shaker. This means that you only have to shake a few seconds to get a fantastic result.
Troubleshooting

Why does my jar fail to vacuum seal/Why does the vacuum not hold?
It's never easy to determine the exact cause, but we do offer the following tips and advice that solve practically all of these questions/issues:
- Always make sure that the pump is correctly centered and connected to the Nanostopper
- Make sure that the rim of the jar is clean. When crumbs or other materials get between the lid and the glass, this can cause air leaks.
- Check that the seal on the inside of the lid (around the rim) is not damaged. When the lid has some age, the seal could be deteriorated. So try a new(er) lid on the same jar.
- When using the Lid Punch: always make the hole in the center of the jar and avoid crossing any creases, bumps or other irragularities in the lid. Remove any labels from the top of the lid and make sure the lid surface is clean.
- Make sure that the lid is screwed on tight, but don't overtighten it since this can damage the seal.
- Although twist-off lids for the same brand or even between brands should be identical, there can always be slight differences. Try to use the lids that can with the jar.

I don't hear a click after pumping. What am I doing wrong?
The most common reason for not hearing the vacuum indicator is that the pump is not entirely connected to the Nanostopper or vacuum lid. Try to keep the pump upright and centered on the stopper or valve lid. You should feel some increasing resistance when you are pumping.
Should you still not be able to create a proper vacuum or hear the indicator, please let us know. We're always happy to help with identifying any issues and make sure we can solve them.

In the rare cases we hear of something like this, it always involves a loose internal part. Because we work with sheltered workshops, it can unfortunately sometimes happen that the pump isn't sufficiently lubricated. This can cause a small cap on the inside to come loose after a while, causing the pump to run stiffly or stop working altogether. Fortunately, this is a very quick and easy fix by disassembling the pump and re-lubricating it.

As with practically all jars with metal lids, in some cases, rust can form over a longer period of time. For example, with lids that haven't been dry or when there have been highly acidic ingredients in the jar for a long time.
While the rust itself is not harmful, we always recommend brushing superifial rust off and making sure that the lid is clean and dry before continuing to use it. If the rust is not only superficial and you're not be able to brush it off completely, then replace the lid. And don't forget to recycle the old one!

The Airtender Clip Top Jar Vacuum Lids have been designed to fit the most commonly available size of clip top jars - often known as size 90 (or in some cases 85).
We have tested many different brands of jars to maximize compatibility. However, it's practically impossible to test all existing types and brands of clip top jar.
Furthermore, variation in glass production or even changes in glass lid designs can happen over time. This can result in lids that do fit on the jar itself, but won't allow the glass lid to properly close (anymore).
